What Is Date Bark?

At its heart, date bark is beautifully simple. Soft Medjool dates are opened up and pressed into a flat layer, a little like the base of a chocolate bark. That sweet, caramel-like date base is then spread with a nutty layer and covered in melted dark chocolate, before being chilled or frozen until firm.

Break it, slice it or snap it into pieces and you have date bark. Chewy, fudgy, chocolatey and made from real ingredients you can actually pronounce.

It became a viral sensation because it hits a very rare sweet spot. It tastes properly indulgent, yet it is made without refined sugar, oil, dairy or eggs. No wonder the internet fell in love.

Kept in an airtight container, date bark keeps beautifully in the fridge for up to two weeks, where it turns fudgy and indulgent. In the freezer it keeps for up to three months, and straight from the freezer it becomes firmer, chewier and almost toffee-like.

In practice, of course, it rarely lasts that long. Consider yourself warned.
